Scrumptious Zucchini Muffins – Gluten & Sugar FREE
I have been looking for ways to eat healthier and get my veggies in me. Well this recipe is a hit. All the naysayers of healthy food in my house, love these.
These are a must try and this recipe will make 18 muffins. This will be a great way to use up some of my extra zucchini from the garden this summer!!
Ingredients:
3 cups of grated zucchini with skin on (I used food processor took 2 minutes)
3 eggs beaten
3 cups of nut flour ( I used 1/2 cup almonds chopped, gluten free flour and 2/3 teaspoon of xanthan gum) You can also use regular flour and chop up 1/2 cup of almonds.
1/3 cup of melted butter
1/2 to 2/3 cup of honey
2 tsp. of cinnamon
1 tsp. of baking soda
1 tsp. of salt
Directions:
1. Mix flour, butter, honey, almonds and zucchini in a bowl.
2. Beat eggs and add to mixture along with cinnamon, salt and baking soda, mix well.
3. Line muffin pan with paper cups and bake at 350 degrees for 20 minutes.
This recipe yields 18 muffins. Enjoy!
